1. Cynara Scolymus, also known as Artichoke, is a perennial thistle grown in some parts of the Mediterranean region, North Africa and Canary Islands. Its edible immature flower buds are used as a vegetable in many dishes and its leaves are used for medicinal purposes.

2. Artichoke is a nutritious vegetable packed with vitamin C, folate and fiber. It is a great source of minerals like magnesium, potassium, phosphorus and iron. It contains antioxidants which are believed to help protect against cell damage and reduce the risk of chronic diseases.

3. The flower buds of Cynara Scolymus are large and globular in shape. They range in color from purple to green and have a mild flavor with nutty undertones. The bud consists of many layers of tightly packed scales which are edible when cooked.

4. To prepare Artichoke for cooking, the outermost petals need to be removed and the top of the bud needs to be trimmed. It can then be boiled, steamed or roasted. Depending on the recipe, the center choke may need to be removed before serving.

5. Artichoke is a versatile ingredient used in many dishes. It can be added to salads, pastas, pizzas, stews and soups. It can also be stuffed and battered and deep-fried, or served with a dip. It is a popular ingredient in Mediterranean cuisine and can be pickled and preserved for later use.
